If anyone can make a honeydew dwarf with red hair and red beard that walks around ; and also if you could make it so you can tame him like a dog except with gold.

So if anyone could make that it would be awesome.

By the way I'm not the best modder or anything

You could Use the NPC plugin or mod. As for the taming you can combine it with the dwarf mod. Hope this helped :)
