A Guide to Minecraft Enchantments. Java Edition 1.19+
There are 5 categories of enchantments: All Purpose, Armor, Melee Weapons, Ranged Weapons, and Tools.
All Purpose:
Mending- 1 level. When holding an item with mending, gathering exp increases the durability of said item.
Unbreaking- 3 levels. Gives an item increased total durability, making it harder to break.
Curse of Vanishing- 1 level. Dying while having in your inventory an item with curse of vanishing, it will disappear forever (a very long time).
Armor:
Aqua Affinity- 1 level. Mining underwater is faster. (Helmet Specific)
Blast Protection- 4 levels. Reduces damage taken from explosions. Creepers, End Crystals, etc...
Curse Of Binding - 1 level. Impossible to remove armor enchanted with this effect.
Depth Strider- 3 levels. Move faster while underwater. (Boots Specific)
Feather Falling- 4 levels. Take less fall damage. (Boots Specific)
Fire Protection- 4 levels. Take less fire damage. Lava, Soul Fire, etc...
Frost Walker- 2 levels. Turns water source blocks into ice. (Boots Specific)
Projectile Protection- 4 levels. Take less damage from ranged weapons. Tridents, arrows, etc...
Protection- 4 levels. Reduces overall damage taken.
Respiration- 3 levels. Lets you stay underwater longer. (Helmet Specific)
Soul Speed- 3 levels. Walk faster on Soul Sand and Soul Soil. (Boots Specific)
Swift Sneak- 3 levels. Move faster when sneaking. (Leggings Specific)
Thorns- 3 levels. When mobs or players deal damage to you, a small percent of that damage is also taken by them.
Melee Weapons:
Bane Of Arthropods- 5 levels. Deals increased damage and applies slowness 4 to spiders, silverfish, cave spiders, endermites, and bees.
Efficiency- 5 levels. Increases mining speed. If applied to an axe, the chance to disable a shield is higher.
Fire Aspect- 2 levels. Sets enemies on fire.
Looting- 3 levels. Mobs drop more loot.
Impaling- 5 levels. Naturally spawning ocean mobs take more damage from trident. Turtles, fish, etc... (Trident Specific)
Knockback- 2 levels. Send enemies backwards upon hit.
Sharpness- 5 levels. Deal overall increased melee damage.
Smite- 5 levels. Deal more damage to the undead. Skeletons, Zombies, Withers, etc...
Sweeping Edge- 3 levels. Increases damage of sweep attack. (Sword Specific)
Ranged Weapons:
Channeling- 1 level. Trident strikes lightning after being thrown and hitting target. Also works when striking lightning rods.
Flame- 1 level. Arrows are set on fire after being shot. (Bow Specific)
Impaling- 5 levels. Naturally spawning ocean mobs take more damage from trident. Turtles, fish, etc... (Trident Specific)
Infinity- 1 level. Shoot infinite arrows. (Bow Specific)
Loyalty- 3 levels. Trident returns after being thrown. (Trident Specific)
Riptide- 3 levels. Player travels with thrown trident. (Trident Specific)
Multishot- 1 level. Shoot three arrows. (Crossbow Specific)
Piercing- 4 levels. Arrows travels through enemies. (Crossbow Specific)
Power- 5 levels. Do increased overall damage. (Bow Specific)
Punch- 2 levels. Arrows deal knockback. (Bow Specific)
Quick Charge- 3 levels. Crossbow takes less time to load. (Crossbow Specific)
Tools:
Efficiency- 5 levels. Mine faster.
Fortune- 3 levels. Increases ore drops. (Pickaxe Specific)
Luck of the Sea- 3 levels. Catch less junk when fishing, increases rare drops. (Fishing Rod Specific)
Lure- 3 levels. Fish bite quicker. (Fishing Rod Specific)
Silk Touch- 1 level. Blocks that normally change/dont drop will drop as their original form. Glass, ores, stone, etc...
Notes:
Conflicting Enchantments:
Some enchantments can’t be applied to an item along with other enchantments. Conflicting enchantments include:
Smite-Bane of Anthropos- Sharpness
Piercing- Multishot
Protection- Fire Protection- Blast Protection- Projectile Protection
Silk Touch- Fortune
Mending- Infinity
Depth Strider- Frost Walker
Commands:
You can enchant a weapon with commands in this format.
Ex. /enchant @s sharpness 5
When /giving an item, two special things can happen when enchanting; conflicting enchantments can be applied, and the max level can be overridden.
Ex. /give @s diamond_sword{Enchantments:[{id:sharpness,lvl:100},{id:smite,lvl:100]} 1
Ways to Get Enchanted Books:
Some enchantments can be found as treasure or from fishing.
Enchant a normal book in an enchanting table.
In the woodland mansion there is a secret chest with an efficiency 2 leather cap.
Some villagers will trade enchanted books.

Also you forgot Projectile Protection
Impaling doesn't work on all underwater mobs like the Drowned and all Guardian types. It only works on fish and turtles.
Also, you forgot Curse of Binding [Armor specific].
