Because you have used the instant damage effect for the attacking, it does a TON of damage, one idea could be to use wither, or poison (I don't remember if fatal poison is an effect in java edition).

poison isnt fatal, it only brings you down to only half a heart, its good you suggested wither, but that hurts you every 5 ticks while instyant damage is one and you're done.
