      Here is a datapack that allows you to melt ores by holding them in your hand and typing the following command :



    /function cdata:smelt


      Note that if you have several stacks of the same ore in your hotbar, you just have to take the one that is the most right and type the command. This datapack works for all ores in the game. You will get xp by melting.

    To clear the hand if the hotbar is filled with same ore, you can store the player's SelectedItem.Count tag as a score, use a /replaceitem then run a loop function to give back items equal to score

    Instead of making the player run a function, you could trigger the smelting if it is sneaking and holding a futnace in left hand, for example
