Hello ! I found a map here, and I would like to use it on my server. However, in theory I'm not supposed to be able to use it if it's not explicitly written that I can. Do you know if all the creations here become opensource?

You should PM the map maker and just ask. If it's not written you could assume but you never know.
At the bottom of this site you can see "All rights reserved. All creations copyright of the creators." yet posting online could be argued that it's open for use. I always leave it up to the author personally.
