I want to make some simple videos showing off the maps I make, but I want to do them right. Can anyone fill me in on the process? Like what video editing program should I use? And how does one get those nice, smooth, professional shots?

The most commonly used "recording software" used to make smooth and beautiful shots in game, would be to use the Replay mod ( https://www.replaymod.com ). I'd recommend you try and download a build you think is really pretty, and then use the replay mod to make a short recording, then go to the replaymod's replay and start messing around with various options in the replay :)
When you've got all the clips exported as .mp4 files, then I personally use DaVinci Resolve to edit everything together. I know there exist other software that is less heavy on your computer, but I prefer it – And its free :D
But the best tip I can give would be: Try out lots of different software, and find out which software you enjoy using :p
