So, the current resource pack I'm working on would do much better if I could figure out how to use Blockbench to create custom optifine models. Can anyone direct me to a tutorial?

In blockbench you can get an addon called "CEM Template Loader" that might help ya. There's also "Optifine Player Models" if case you want to make people and not mobs.
Open blockbench, file < plugins, and browse.
