Sometimes when I update my texture pack... it backdates to a version that uses textures that are long deleted. I don't want a fix I just want to know why it does that. Just out of curiosity.

You are doing something wrong. I just take my new updated texturepack and drag it to the texture packs folder to replace my old one.
I mean when you edit your texture pack to make it that people download the new version.
I've had that too. Just rename the file. Even if you just take away a space or replace this ( with this [. Works every time
