You, my friend, are a smart person then
HTML5 is the way of the future and the only type of HTML that should be ever used!

No, it's a matter of opinion... HTML4 is just as good. You can call your markup HTML4 or HTML5, but all the same, it's still just markup.

Preferably, I like XHTML.

It's amazing!
One thing though, I have a resolution of 1440x900 (16:10 aspect ratio) and on the website 1, the ipad is cut off a little bit. When I zoom out to 90% it's perfect.

They're nice. Although the design seems a bit too simple. The colors don't match, and some of the animations are too slow. Otherwise, neat idea.
I'm also assuming you're hosting off your computer, so loading a bunch of jQuery libraries may not be the best idea. Images are also slow loading.

You should try to implement the same ideas using pure JavaScript, to reduce load-time with jQuery. For instance, instead of jQuery animation, you could do a mix of JavaScript events + CSS3 animations.

Awesome websites, I really liked them. Good job, you're pretty good at it. Also the first one was my favorite.
