These are great. I'd also reccommend DayZ if you're into hardcore survival and looting. Rust is similar to DayZ, but not as challenging, in my opinion. It also focuses a lot more on base-building and crafting and hunting than the DayZ standalone, which currently doesn't have much crafting and has no base-building (though I think it's a planned feature). If you opted for the DayZ Arma II mod instead, there are lots of DayZ varients that offer a lot more crafting and base-building options.
Yup, I only have Don't Starve because I lack moneys (<Intentional comedic typo) and I so darn love it. But The Long Dark and Rust's screenshots look cool too ;3

I don't know any good survival "Sims" but you could try Don't Starve, The Long Dark... I think there's also a survival game called "Rust" or something. Project Zomboid if you're into zombies. I don't know
