While I would gasp like an anime girl at the idea of them actually doing an End Update, Other cool ideas I would like to see include:
- A weather update. No more just having clouds, snow or rain. Need something better.
- Just a cosmetic update. New Stairs, Slabs, etc. I know a lot of the community wants this one too. I can't be the only one.
- A whole update dedicated to farming would be cool. I can't really see how they could get a lot out of it without adding in a bunch of new features (Kinda the point really)

The 1.19 update is going to be called the "wild update" and I believe it was announced at Minecraft Live 2021

Calling it now. In the next 2 years we will receive a climate update. Maybe not 1.19 but sooner than later.
Weather has been as it is for a long time. And The meaning of climate can literally tap into any unfinished idea of the last years (all the biomes that have been in the biome vote) You could add biome overhauls under the climate umbrella.
Clouds a re just a big texture that moves in one direction. Weather is really boring right now. Its 2 dimensional. It only depends on time and location (biome you in + height). I think a system where the weather is depending on game time+seed over time would be really interesting. a "4d noises system" so to speak. A system like that could have great potential for other mechanics of the game.
Minecraft would start to have the same weather at the same ingame day in the same location if the seed is the same. On top of that you could add a sandstorm effect and also a wind system even.
The topic of "climate" is so broad and can improve so many aspects of the game, as well as weather in minecraft being really lackluster, that an update in that direction is bound to happen.
