Adventure Map Tutorials

I would like to make an adventure map, I have the ideas written down and everything, and now I'm ready to get started! But I don't know how to do a lot of essential things.
Here's what I need to learn:
I'm guessing most of this involves command blocks
* I know how to add custom music, but how do I make it play when I want it to? (Like for instance, play when you enter a dungeon.
* How do I make zombies (or other mobs) spawn with different equipment?
* How do I give items special properties? (Like being unbreakable?)
* How do I make mobs spawn in certain areas without utilizing spawn eggs?
* How do I make large text appear in the middle of the screen?
* Cut scenes? (But that's not 100% necessary)
If anybody can point me to a tutorial or other resource that can assist me I will greatly appreciate it!
