if in creative you can use the superflat "void" preset to be in the air
The image didn't show for me lol but I mean you can get a lot of dirt blocks stack it, and then build ur palace or whatever you wanted to build, then take away the dirt blocks. Again the image didn't show so lol I see people talking about mods~

They must have either used mods and special tools or used commands to break all of the blocks in a superflat world. At least, that's what I'm thinking.

Hmmm... Well intuitively I would use a /fill command to fill the surrounding 1000 blocks or so with air. It would look something like this:
/fill 0 4 0 1000 0 1000 air
Try that in a superflat world and see what happens!

Be warned though: if you destroy this many blocks at once that may cause your game to lag or crash. Try doing a safe 100 blocks at a time, rather than 1000.
