I changed the key shift to the key c, i can sneak but i cant shift armor onto my character, and i cannot shift left click items into my inventory.
Even though i changed the shift key to c, when i press shift it can still shift items onto my character and shift items froma chest into my inventory(even though i changed it to the key c)

Try to reset the controls and then customize the controls again.
It's not a setting you can change, the only way to change it is to go into the game's config files.
Just a question, do you use optifine?
yes i use optifine
Changing the "shift" key only changes the key you use to crouch, but there is no way to change the inventory's shift function (In the settings tab). I hope this helps you understand why it's still the shift key.
