When I use the /hat command from essentials I get "You must have something to wear in your hand."
when I am holding a block.
What exactly is the problem?

The block is unable to be put on your head. Like a barrier block for example.
A better, but longer way to put all blocks on your head and even items (diamond swords etc) is
/replaceitem
