for some reason when i play older versions of Minecraft they always bug out and everything is just a buggy mess

Specifics would be helpful…
What version {that works} do you normally play (java/br & numeric as well as any mods etc.)?
What version bugs out (ditto)? [Among other possibilities a few of teh release versions (e.g. 1.13.0) are known to be buggy in and of themselves.]
Are you running both through the same launcher? (and what is it if not vanilla)
Have you tried deleting and doing a clean [re]install of the 'buggy mess' versions?
What (if any) of that is important reamins to be seen, but providing as much specific information as possible greatly increases the chance of someone being ablet oat least recognize the problem [and hopefully describe a solution].
