hi everyone! thanks for your suggestions and / help, but I've solved it! I tried pressing every button on my keyboard to see what they do, and I landed on the Alt button, which let me edit attributes, and allow "prevent interaction", which made blocks only interact with me when I was holding an item. I'm no expert, but I think with that on, Minecraft was freaking out on what to do, since it couldn't open. I'm no expert, so sorry if I got that extremely wrong. anywho, thanks everyone for the help!! <3

I looked at your mods and the video, and I'm not exactly sure what would be causing it. Do you have any datapacks that could be affecting block states?
Most likely it's a mod that changes GUI in some capacity or adds more containers which would have their own unique GUI that would therefore break the barrel's. I'd recommend checking it with chests, shulker boxes, etc. Then removing particular mods that could be causing it and see which one changes it.

im just guessing its some quality of life mod that has it activated
for more details on the data-pack / mod, the only Time it doesn't act weird when I'm holding an item or crouching.

From the phrasing of your question/explaination, it 'sounds' like you're working on a map; if so, building in a world with no mods would both remove any issue the mods are causing as well as assuring the end product is vanilla compatible. (This may also be true for some datapacks as well as texturepacks that alter blockstates or models.)
