Help with Presets

So this week I have been messing around with the preset features in Minecraft, and I need this answered so I can continue with customizing my world to my liking:

How do you change the options so that the mountain like biomes (mesa plateau, extreme hills, roofed forest mountain, etcetera) are taller without affecting the flatter biomes (plains, forest, swampland, etcetera)?
