Is there a way I can allow players on my server to only place/destroy wooden doors, though not any other block?

Use modifyworld and permissionsEx. Or get essentials and EssentialsAntibuild with permisions: essentials.build.break.[itemID]
Try out the plugin WorldGuard. You can ban certain items from certain ranks, and so, you can ban all those items besides the ones you want.
Im not a coder, but that sounds like an extremely easy plugin to make, post somewhere else asking for a plugin that does that and see if anyone replies.
