For some reason servers like Hypixel and Mineplex lag really badly when I play them. The game itself doesn't lag but the server does. How do I fix this

So you cannot change it
(you can only ask people to not use laggy things like redstone things or mass spawns of mobs)

What you're describing is likely due to high latency and/or packet loss. Check to make sure nothing is wrong with your network connection.
