I'm not sure if this may be considered a valid answer by others, but you could try looking into MultiMC, an open-source alternative Minecraft Launcher that's designed to make separating your minecraft versions (and their mods) easy.
With it, all you would have to do is download the launcher, and tell it what version of Java you're using, and what is the maximum amount of RAM it can use up to.
Then you would be all set with making new instances (of Minecraft, of different versions).

Go to "Installations" in the Minecraft Launcher, hold your mouse over the version you want to change and click on the three dots and then on "Edit". There you click on "Browse" under "Game Directory" and select the folder in which this version should run. At the end you just have to start the whole thing.

Under "Browse" you can select a folder in the file manager where Minecraft writes its files. After that you have to start the Minecraft version as normal.

Whichever you want, but I recommend using a folder that is always in the same place, otherwise Minecraft will not recognize it.
I myself use a folder for snapshots in the same folder as the .minecraft folder.
