What everyone here is saying is correct, but if you still have problems with your chat just continue the thread or give me a PM, thanks!
You can easily remove the <> in essentials chat, just remove them respectivley in the ess config under chat format. As for the nickname the above man is right.
With most chat manager plugins you can customize how your chat is formatted. You can remove the < >'s with one of those. The nick, just like how colin350 said is in your essentials config, It should be in line 26, nickname-prefix: '~'

In fact, the only way to remove the < and > is impossible, as it is to exclude the title/name from the chat.
To Get rid of the ~ in the nickname, it is in the essentials configuration. You can only get rid of it with essentials installed. I believe it is right there when you open the config file.
