we intend to reset our server but wish to take parts of it with. is there any way to take specific areas with? (eg the mall, etc)

Copy it with MCEdit
Or with Bukkit get a multiworld plugin like Myworlds or Multiverse and copy/paste it into your new world using WorldEdit

Of course! MCedit is the most widely-used tool for any-sized selections of block from a world (one of many features it has). I use it frequently, and I'm on a MAC lol.
