When I try to do what the guide says, and open Optifine with Java, I don't even get the option to! Help!

Go to Control Panel\Programs. Is Java there? If it is, then you should be able to open the .jar OptiFine file and Install. If it doesn't work, I'd suggest uninstalling/reinstalling Java.

Well, you need Java in order to open .jar files. Just to double check, go to Control Panel\Programs\Programs and Features and search for Java. If it's not there you will need to install it.
