Before you delete your .minecraft folder, I'd recommend making a folder on your desktop named 'Minecraft Backup' or something, drag your server list, maps, important versions, and resource packs, delete .minecraft, reinstall, then drag all those files back into .minecraft
Your server ips will also be lost if you remove the entire .minecraft folder.
no, the server info is hosted by the server, however your single players worlds will be gone unless you back them up, you can do this by going to your .minecraft folder and copy and pasting the "saves" folder to the desktop, i hope this answered your question
