I had another look at this map today, and using the HWYLA mod I was able to see that the leaves are all marked as 'Persistant: true' and for naturally spawning leaves, that should be false.

However, having looked around many of the trees, I notice that the way the leaves are structured around the wood that makes up the tree trunk, if the leaves were set to false, most of them would not survive - they would decay because they are not in contact with the wood blocks or in contact with other leaves that ARE in contact with wood blocks. I would sugggest that this is why the leaves have been done this way, to give a better appearence to the tree - these are custom trees, not Minecraft trees.

........ just thought you'd like to know.

Just on the off-chance, I made a 1.14.4 forge instance and added the fast leaf decay mod to it - still the leaves remain ........ sorry. The worldedit suggestion from @Myyoyo may work for you, but from your post, you seem short on time.

You can use WorldEdit to turn the leaves decayable.

Well, I've just loaded the map into 1.13.2, which is the MC version it was created from - chopped down a tree, and still the leaves remained.
I made it a Forge version for 1.13.2 and added the fast Leaf Decay mod :
https://www.curseforge.com/minecraft/mc-mods/quick-leaf-decay/files/2676359

I chopped down another tree - and even then, the leaves remained - the only way to get rid of them seems to be to break them by hand. I presume this map has been made with some sort of editor, which means the trees may be seen as 'player placed' instead of growing naturally, in which case, I know of no solution .......... maybe others can assist ?

You didn't say which MC version you are using, however, whatever version I choose to download, it is always the same version.
The map was created in MC 1.13.x, so whichever file you choose to download, you end up with the 1.13.x map.

Anyway, I've just loaded the map into MC 1.14.4 and chopped down a couple of trees. After 5 mins, the leaves are still there. Maybe this map needs to be in 1.13 and not 1.14 - I shall give that a try.
