Minecraft won't work (Launch errors, PC crashes)

Been having problems trying to play Minecraft Java over the last couple months, and not sure what the problem is. Every time I try load from the launcher I either get a Game Crash from launch, or my system just reboots. I've already tried uninstalling/reinstalling everything to no avail. Have tried using both 1.19.1, 1.19.2, and with Optifine 1.19. One thing I do notice is as soon as I try launch the game my CPU temps start shooting up. Cooling and air flow is great have no other problems. I can play COD at 1440p and keep my frames pretty close to my 240fps cap with neither cpu/gpu temps going past 60C. I did swap some of my PC parts in January but they were upgrades, and the game ran fine before. Here are my specs hoping someone can give me some incite on this....



5900x @ 4.625 all core (Tried launching game with it clocked down to 4.4 still no go)
