There's not much to explain, so I'll give my best description of my issue...
ONLY on MCCentral, I get these long lasting ping spikes, my ping will go from 20ms to 400-1000ms for about 11s (which completely freeze the server). I don't know why ONLY MCCentral, or why this is happening in the first place. If someone has had this issue or a similar one, please share your solution with.

I havn't had this issue before, however I can assume the cause of the spikes. It's most likely due to their host, which is known for having a poor connection in certain areas of the United States, and anywhere outside of the US has little to no chance of staying connected for longer than 20 minutes without crashing in the manor you described.
It's a hosting issue, unless you live in an area with particularly poor weather or have slow broadband
