Problems in 1.0 release

Hello,

I'm french and my english could be approximative but I really need your help to fix a problem I met in Minecraft.

I like to play in singleplayer in a old version, but since 1 week I have a lot of textures bugs as you can see in the pictures. Even my bar in the bottom is entirely black.

I try to :
- Install another texture pack
- Uninstall and install Minecraft
- Uninstall and install Java with a more recent version
- restart my PC
- Change all graphics options

But currently, nothing works...
