Does anyone wanna do a survival world with me? AND how do I even start a multiplayer world? And in case you're wondering, I'm NOT referring to servers. I'm referring to a world with just me and someone else.

To answer your question, I think you have to open up a Realm that, I believe, will be only exclusive to you and your friend. The problem is, you have to BUY it with your money. Fortunately for you, if you haven't bought a Realm, you can start a free trial, which I believe will last for 30 days. I hope this answers your question.
The basic options for running a multiplayer world are hosting on the LAN and running a server. LAN means the Local Area Network (basically "your wifi network") whereas a server can connect across the internet. If you are only playing with a couple people and are computer-savy, you could use a VPN (Virtural Private Network) like Hamachi to let a few friends join your LAN from afar.
Alternatively, you could use aeternos, an ad-supported server host that will host a world online for you. This service has some limitations however. You need to wait for a free slot for the server to start up, and if everyone leaves then the world gets closed and you need to wait to start it again. The computers to run this thing aren't very beefy, so if you are trying to run a lot of mods or complicated maps with tons of command blocks this won't work for you. Aeternos should be able to handle a survival world pretty easily.

Unless you plan on using a LAN (local area network) world and only being able to play with other people on the same network as you, or purchasing a Realm to play on, the only way to have a multiplayer world is through using a server.
