I have this old resource pack that I just mash a bunch of other packs together now and then, but I haven't played in a while and I think I scuffed it trying to change the format to the new version of optifine.

Quite possible, there have been a number of trivial but annoying changes to the syntax of JSONs and the folder names over the last few years.
(I find it often tacks longer toport a pack between all the various versions than it does to make tha actual content.)
You might try downloading similar packs from https://vanillatweaks.net/ as a reference for the folder structure and checking https://misode.github.io/ for help with the JSON formats
