But they aren't in game!
I has at lake taho during the update so I don't know if I missed something :/

These gems are emerals
Adding on what the above stated, basically they were going to implement Rubies, however decided against it and made Emeralds instead.
Actually they were going to make both but they didn't have time for rubies so they just made emeralds
Minecraft trivia: Did you know that in the 1.3 prereleases, emeralds used to be rubies?
Mojang probably just forgot to remove the ruby files from the game.
