Just started a server. How do I edit my server's flavor text on the game's Multiplayer menu?

Your MOTD? If so you can change it in server.properties. There are some helpful sites that let you customize your MOTD with colors and such. My favorite is the Minecraft Tools editor.

I can't figure out all the code lingo on that thing.
It's in json formatting. Basically wright what you want then copy the text from the box and paste it into your motd slot on your server.
