Right well sometimes I make a little typo and want to delete that one wrong letter, but when I press the delete key it deletes the whole word. This can get very annoying.

Are you sure you're not pressing [CRTL] or it's not got stuck (it's the default zoom key for Optifine, that's why I ask)? If so, don't hold it - if you do then the whole message gets deleted - like the problem you're having.
DO you run mac or windows?
