Versions for Minecraft server set upbuild

Hi,
I am trying to set up a minecraft server and have been looking for information on the correct version of SpigotMC with my version of Java and Minecraft.
At this moment, I have Java v.16 and the latest version of Minecraft Java.
Please help. Very interested in getting this rolling and any assistant on links or videos would be a great help.

The client and server version must match. However, if you use viaversion and viabackwards plugins then pretty much any 1.8+ client can connect to any 1.8+ server, even if the versions don't match.
