A pack where friendly mobs turn evil if you hit them
A pack where trowing a emerald at a pillager will make the friendly towards you and only you

Also, if you don't like creeper, bats, or any other mobs during the daytime, I recommend Burning Mobs Data Pack

I'm not sure if anyone's done it yet but make a tropicraft / twilight forest data pack where you can make a new portal to a new strange world with completely different stuff.
Also something i'd really like to see would be pams harvestcraft forge mod made into a datapack
