I'll get the ball rolling by saying pine wood and just about anything (excluding gravel, the world's ugliest block). Pine wood and red wool looks really nice, as does pine wood and lapis block.

one of my favorites is iron/ red wool and glowstone, the silver and red go good with the golden color of glowstone
