in vanilla minecraft can you stack farms or have farms underground and crops still grow?

You can build underground farms in Minecraft. At the very least, crops only require water and lighting for it to grow. The lighting doesn't even need to be sunlight, which means you can have artificial light (i.e. glowstone, redstone lamp, sea lantern, etc.) in your farm.
How well lit does it need to be? Like solid roof of glow stone or can it be spaced out to save on glowstone?
Lighting in Minecraft doesn't just affect the block above or below it; instead, it spreads evenly in a circular manner with a radius of 15, and gradually fades out to a light level of 0 (if you turn off Smooth Lighting in OptiFine, you'll see what I mean).
To answer your question, you can space out your glowstone the same way you light up your house. Keep in mind that crops need at least a light level of 9.

You can stack farms and make them underground.
Just remember:
1: if you use redstone, place the water first before you start making redstone wires.
2: If you make farms underground, you need to light the area up.

awesome news, how well lit does it need to be? kinda thinking layer of glowstone as the ceiling
Crops grow in a light level of 9-16. So you might want to use glowstone doted around the dirt.

Nice, and I recommend that you can combine your farm and mining quarry into your house underground. Just watch out for evil foes!
