Personally, 1.12.2 is best for modding, I always do 1.17 with 1.8 PVP plugins on servers.

Modded 1.12.2, 1.14.4 is also great - I don't want to say 1.15 or 1.16 because the updates both seem pretty insignificant to me, and 1.17 isn't fully completed yet (caves & cliffs)

All versions are good. I've been playing pretty much since the beginning of minecraft. I didn't always love every part of every update. Hunger and villagers each took a while to get used to. But 1.17.1 is pretty great! Seems like good things are planned for the future too.

honestly i think that minecraft used to look better but that is mosly because of nostalgia, i think with the new update and how they changed ores it looks new and fresh but also a bit like 2015 mod, i prefer old looks of blocks but 1,17 is still a cool update. the thing i miss most are the old villages .
