If you're struggling to find one, I'd recommend using XisumaVoids Vanilla Xray Machine/Trick
And you'll be able to see all the caves the narrow ones will most likely be Mineshafts!

Yeah, they're not that rare. If you find one, you've basically found them all. But if you haven't found any, then you're going to have a hard time finding one. It's just one of those sucky things.
I'd say about 56.7 % since they are not that rare.
