Interesting things to do in Minecraft

Hey guys, im new to the forum and old minecraft player who finds trouble finding interesting things to do within the game that will keep me motivated and make me enjoy it more.

I would say ...
if your new to the game.
navigating and exploring 1#
resourcing and production 2#
construction and complex building features 3#
if you want it's totally up to you go for resource gathering.
produce as many resources as you can mine and collect resources on land.
store your resources and find different weapons or tools to craft.
farm like anything 4# farm your resources including crops, stone,lava,water, animals and etc,etc.
be consistent with the game keep playing . who knows what will happen in the game.

Do a bit of research on the game and see what you find out.

Play multiplayer
Join a small server with a good community. You can make friends and talk to people there. The only time I actually played survival was on SMP servers.
You could also do all the achievements! Or, if you play the newest version, all the advancements!
Yeah, I've you've been playing minecraft for a while there's not a whole lot that I'd guess you haven't already done, achievements are one thing at least I have never 100%d
Start doing commands! There is a huge chance that you aren't interested, but it's quite cool to feel a god in a world of blocks.

Build redstone machines
Auto smelting
Auto enchanting etc kinds of stuff
i never did those but they are so interesting to try out tbh i dont know that much about redstone so i could do these stuff but i found EthosLab (youtuber) did those on his channel seems interesting to me you can try out too

build all possible farms, villager, skeletons, zombie pigman, witch, guardians, wheat, big mushrooms, melon, pumpkin, potato, afk fishing ........................... even ghasts can be farmed
also build a man cave, a train station to all different biomes, dungeons, a medieval village
personally I'm building a man cave in survival and I'm working on all those farms, I also enjoy making texture packs and mods

Perhaps you could blow up a Nether Fortress? I always find that calming.
