What if there was another class of villager that was really rare called "Builder" in which you can pay him emeralds, and get access to a Command Block-like interface, Where you can do "/destroy x1,y1,z1 x2,y2,z2" and it will display how many emeralds he will do the job for. And you hand him tools to use like shovel or pickaxes, etc. He will have a backpack and will collect everything in the area you asked to dig. And will give you the contents after the job is done. You can also do "/build x1,y1,z1 x2,y2,z2" and give him contents to build with. And will come back to you with the leftover contents again after the job is done. When I say "Come back to you" he will have mob AI with an extended radius of detection. But if he has no job he will have Villager AI.
I am sure of making a command function, you could have checkboxes, or something, or even used named items to tell it chords, idk. just an idea I'm throwin out there.
This would make villages have a better purpose to search for as you can build structures with help, even in single player. And could help multiplayer world projects significantly. Especially in those with armies or factions.
(Instead of goods, you get services.)

Or mabye select a type of building to make, give him the needed resources and the required amount of emeralds then tell him what coords to build at and he does it.
That would be cool nice idea but would better if it would be easier commands but good idea.
