I'm looking to play one of those majorly game-changing java mods like the medieval one, pixelmon or RLcraft. Does anyone have any suggestions other than the few that I mentioned?

I'm playing the LOST ERA modpack and quite enjoy it. I'm not new to MC Java, but I am still learning things - the creators of this mod have not followed all of the updates to the main game since about version 1.7.x but it is still fun IMO, single player or multiplayer. The Lost Era on Modrinth is where I stumbled on it.
