Create Block Texture?

Hey, I'm really new to making new textures for things, and I've only made one to make a cat look like mine. I want to make a texture that replaces acacia leaves & wood with maple, for a project I want to do. But I'm not sure how to do that, like where I can make it, because the PMC skin creator only supports mobs.
I liked the way that with the cat, you could choose which cat variation to replace with mine, and I was wondering if I could also do that with wood. I don't know. Or, alternatively, if my idea already exists, please send me a link. I've seen some really good textures but the best ones replace cherry blossoms with the maple and I love my cherry blossoms :(
