minecraft can and will use more then 1 core
with optifine even better

minecraft is single threaded so only one core is neccesary for a server
as i understand it, minecraft is but java isnt. So the more power you can get the better.
One of the most important things is ram and drive speeds. A slow drive is death.
If you have a lot of ram then use a ramdisk setup and you wont have to worry about speeds.

I would recommend the 2nd one, since it has everything the first one has, but more. It has more cores, and a way faster Ghz, making it faster.
