So in single player mode how can i set a spawn for my adventure maps. When you die you end up in random place. I have seen before on maps I have download that you keep going back to the same place, but not on my maps?

It is a bit confusing at first. MCEdit will probably be easier, but it doesn't run on my computer.
With NBTEdit, open up the level.dat file in your world folder, and change spawnX/Y/Z to the co-ordinates you want to spawn at. It takes a bit of getting used to do it perfectly.
You can play about with it more and specify time of day, hunger levels, starting health as well

Be aware in multiplayer, you can spawn anywhere in a 20x20 grid around the spawn block.

what about in single player?
Put a bed down where you want the spawn and wait to night and sleep and it will be your spawn
But if it gets destroyed the old spawn will be back.
MCEdit might be the best thing to use or use single player commands to set your spawn.

I can't do the bed as it gets distroyed by players looking for a exit,

just install it using the installer it comes with or manually drag the .class files into the .jar with winRAR or 7ZIP.
It adds multi player commands to singleplayer.
You can use /setspawn *Or maybe it was /set spawn * (With a space) then your new spawn will be where you set it.
