Okay so I may have gotten a little carried away but milk and bones heal skeletons and skeleton horses and rotten flesh heals zombies and zombie horses. You can now turn a horse into a zombie or skeleton variant by throwing rotten flesh (to turn it into a zombie horse) or a lightning rod (which will summon lightning to turn the horse into a skeleton variant)
