Hypixel already has a version of Mario Kart, so it already exists.

True, but in order to make the players unable to move the camera I'd have to lock head rotation, which will result in a not so good looking game. Since everybody will go left and right without them moving their heads.

Those would be hard to hard to recreate in Minecraft though. Especially because those games are 3th person and Minecraft first person.
