That is a vast over-exaggeration. Currently, there's only 6 "Minecraft, but" datapacks in trending's 1st page. Yes, it's a lot but I fail to see why it's so hard to ignore. I saw plenty of more genuine data packs in the trending page too. I don't like these kinds of data packs either, but some people do. You can't let your own personal bias call one kind of data pack "good content" and another "bad."
And you can't ignore it... Why? I like browsing the skins but the amount of Dream recolor skins gets annoying, but people find it fun to make so you can just ignore it.
If people find them fun to make and use, I don't see the issue. Minecraft is all about having fun with it in your own way, this is a harmless fun thing some people like to do. If you don't like them you don't have to use them or view media with them.
