I'm going to settle with 1.16 for now as it brought much needed changes to the Nether without affecting the progression (you can skip the whole piglin-bastion thingy if you want). 1.17 is even bigger and some of the changes are considered controversial (e.g. upcoming archaeological sites). However, I do like the direction minecraft is heading in, so I may change my opinion in the future
